Jam Cake
- 1 c. butter
- 3 c. flour
- 2 tsp. soda
- 1 tsp. vanilla
- 1 1/2 c. cherry preserves
- 6 eggs, separated
- 2 c. granulated sugar
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. allspice
- 2/3 c. buttermilk
- 6 Tbsp. cream
- 2 c. nuts (pecans or hickory nuts)
- 1/3 c. bourbon
- Cream butter and sugar together with mixer until fluffy.
- Sift flour, soda, cinnamon, nutmeg and allspice together three times. By hand, add flour to the creamed mixture alternately with milk. Add cream.
- In a separate bowl, pour bourbon on nuts and allow to soak.
- Next, add vanilla, egg yellows and preserves.
- Beat the egg whites with electric mixer.
- Add the nuts and bourbon to the batter.
- Fold in beaten egg whites.
- Pour batter into three greased and floured round cake pans.
- Bake in a 325u0b0 oven for 40 minutes.
