Red Snapper Victoria
- 1 1/2 lb. red snapper
- 1 (15 oz.) can tomato sauce
- 1 (16 oz.) can stewed tomatoes
- 1 medium onion, sliced
- 1 bell pepper, chopped
- 2 carrots, sliced
- 2 stalks celery
- 1 tsp. oregano
- 1 tsp. garlic salt
- 1/2 tsp. basil
- 1 clove garlic
- salt and pepper to taste
- 2 Tbsp. oil (olive or vegetable)
- Saute garlic lightly in oil; add vegetables and saute until onion is tender.
- Add tomato sauce and stewed tomatoes; sprinkle all with seasonings.
- Cover and simmer for 10 minutes to blend flavors.
- Add snapper fillets, cut into serving size portions. Bring to boil; lower heat and simmer for 15 minutes or until fish is firm and flaky.
- Can keep warm for 1 to 2 hours.
- Serves 4 generously.
- Good with cheese bread and salad.
- Can also add scallops, shrimp or squid.
