Red Snapper Victoria

  1. Saute garlic lightly in oil; add vegetables and saute until onion is tender.
  2. Add tomato sauce and stewed tomatoes; sprinkle all with seasonings.
  3. Cover and simmer for 10 minutes to blend flavors.
  4. Add snapper fillets, cut into serving size portions. Bring to boil; lower heat and simmer for 15 minutes or until fish is firm and flaky.
  5. Can keep warm for 1 to 2 hours.
  6. Serves 4 generously.
  7. Good with cheese bread and salad.
  8. Can also add scallops, shrimp or squid.
