Mostaccioli (Macaroni And Cheese)
- 2 c. mostaccioli
- 3 Tbsp. butter
- 3/4 c. chopped onion
- 3/4 c. chopped celery
- 1 to 2 cloves garlic, minced
- 2 (6 oz.) cans tomato paste
- 2 c. water
- 1 tsp. basil
- 1 tsp. oregano
- 2 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. sugar
- 2/3 c. grated Parmesan cheese
- 1 lb. Ricotta
- Cook mostaccioli according to package directions.
- Melt butter in a large skillet.
- Add onion, celery and garlic and cook over medium heat until golden.
- Add tomato paste, water, seasonings and sugar.
- Cover and cook about 20 minutes.
- In a 2-quart casserole dish, spread a thin layer of sauce over the bottom.
- Sprinkle with 1/3 of the Parmesan cheese.
- Layer with half each of the mostaccioli, Ricotta, sauce and half of remaining Parmesan cheese. Repeat layers with remaining ingredients.
- Bake at 400u0b0 for about 25 minutes until hot, bubbly and golden brown.
- Yields 6 servings.
