Pralined Sweet Potatoes And Apples

  1. In a large saucepan, parboil potatoes about 20 to 25 minutes or until nearly done, firm, yet soft enough to be pierced with a knife.
  2. Drain and cool; peel and cut into 1/2-inch thick slices. Halve apples lengthwise; core and cut into 1/4-inch slices. Squeeze lemon juice over apples to prevent them from turning brown. Grease a 9-inch quiche dish.
  3. Arrange potatoes and apple slices in alternating rows working from the outside of the dish toward the center and ending with potatoes.
  4. In a small bowl, combine remaining ingredients.
  5. Sprinkle over slices.
  6. Microwave on High, turning the dish every 5 minutes until apples are done.
  7. This can be baked at 350u0b0 for 30 minutes.
  8. Pierce with a knife to check if apples and potatoes are cooked.
