Polynesian Stew
- 2 Tbsp. canola oil
- 1/2 small onion, sliced crosswise
- 4 stalks celery, sliced diagonally
- 1 clove garlic, minced
- 1/2 to 1 lb. lean round steak
- 1/2 sweet green pepper, cut into strips
- 1 c. beef broth
- 1 tomato, cut into 8 pieces
- 3 or 4 oz. can sliced mushrooms
- 2 tsp. soy sauce
- 2 Tbsp. cornstarch
- In a large skillet, cook the onions, celery and garlic in the canola oil for 3 minutes.
- Add the round steak, cut in thin strips and the strips of green pepper.
- Cook until meat is slightly seared.
- Add the beef broth, tomatoes and mushrooms.
- Mix the soy sauce with the cornstarch until smooth.
- Add to meat mixture and cook on medium heat until mixture is clear.
- Serve over rice or noodles.
- Yields 4 to 6 servings.
