Christmas Snow Salad

  1. Soften gelatin in 1/2 cup cold water; set aside.
  2. Drain pineapple, reserving juice.
  3. Add enough water to juice to make 1 cup.
  4. Bring pineapple juice mixture to a boil; remove from heat and stir in softened gelatin.
  5. Chill mixture until consistency of unbeaten egg white.
  6. Prepare whipped topping mix according to package directions, omitting vanilla.
  7. Fold 1 cup topping into gelatin mixture (reserve remaining topping for other uses). Gently fold next 5 ingredients and pineapple into gelatin mixture. Pour into a lightly oiled 4-cup mold.
  8. Chill until firm.
  9. Unmold on serving tray.
  10. Garnish with additional cherries, if desired. Yields 8 servings.
