Cheesy Chili Cups
- nonstick cooking spray
- 24 won ton slices
- 1 c. shredded low-fat Cheddar cheese
- 1/3 c. low-fat Ricotta cheese
- 1/4 c. canned green chilies, drained and finely chopped
- 1 Tbsp. chopped chives or green onion tops
- 1/4 tsp. ground cumin
- 48 ripe olive slices
- Spray 2 sets miniature muffin tins with nonstick cooking spray.
- With 3-inch cookie cutter, cut won ton skins into circles. Place one circle in each muffin cup, molding it to the cup. Spray lightly with additional nonstick cooking spray.
- Bake in preheated 350u0b0 oven 7 to 8 minutes or until golden.
- Remove from tins and place on cookie sheets.
- In medium bowl, combine cheese, chilies, chives or green onions and cumin.
- Mix well.
- Fill each won ton cup with 2 teaspoons cheese filling.
- Top with two olive slices.
- Bake in preheated 350u0b0 oven 10 minutes or until bubbly. Serve warm.
- Light recipe.
