Gumbo
- cooking spray
- 3/4 lb. smoked turkey sausage, sliced
- 1 1/2 lb. skinned boned chicken breasts
- 1/2 c. all-purpose flour
- 1 Tbsp. vegetable oil
- 2 1/2 c. chopped celery
- 2 c. chopped onion
- 2 c. chopped green pepper
- 1/2 c. chopped green onions
- 4 cloves garlic, minced
- 1 Tbsp. Creole seasoning
- 1 Tbsp. low-sodium Worcestershire sauce
- 2 tsp. hot sauce
- 1/2 tsp. pepper
- 3 bay leaves
- 3 (14 1/4 oz.) cans fat-free, reduced sodium, chicken broth or homemade to equal amount

- 6 c. cooked long-grain rice, cooked without salt or fat
- Coat a large nonstick skillet with cooking spray.
- Add sausage and cook 5 minutes or until browned on all sides.
- Remove sausage and set aside.
- Add chicken to skillet and cook 7 minutes on each side or until chicken is done.
- Remove chicken from skillet and let cool, then shred chicken and set aside.
