Apple Cobbler

  1. Combine apples, 2/3 cup sugar, 1/4 cup cider and lemon juice in a 10 to 12-inch Dutch oven.
  2. Cook, stirring until boiling. Reduce heat.
  3. Simmer uncovered, 3 minutes or until apples are almost tender, stirring occasionally.
  4. Stir together remaining cider and cornstarch.
  5. Add to apple mixture.
  6. Cook, stirring until thickened and bubbly.
  7. Keep warm.
  8. Combine flour, 1/4 cup sugar, baking powder and cinnamon.
  9. Cut in butter until mixture resembles coarse crumbs. Combine egg and milk and add to flour mixture, stirring just to moisten.
  10. Drop into 12 mounds on top of hot apple mixture.
  11. Bake at 400u0b0 for 20 to 25 minutes.
  12. Serve warm with ice cream.
  13. Makes 6 servings.
