Lemon Blueberry Bread
- 1/3 c. butter or margarine, melted
- 1 c. sugar
- 3 Tbsp. lemon juice
- 2 eggs
- 1 1/2 c. all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. milk
- 2 Tbsp. grated lemon peel
- 1/2 c. chopped nuts
- 1 c. fresh or frozen blueberries
- 2 Tbsp. lemon juice
- 1/4 c. confectioner sugar
- Beat butter, sugar, 3 tablespoons lemon juice and eggs. Combine flour, baking powder and salt; stir into egg mixture alternately with milk.
- Fold in lemon peel, nuts and blueberries. Pour into greased loaf pan.
- Bake 60 to 70 minutes (until bread tests done) at 350u0b0.
- Cool in pan 10 minutes.
- Remove from pan. Prepare glaze; combine 2 tablespoons lemon juice and confectioner sugar.
- Drizzle over bread.
- Cool on rack.
