Caramel Corn
- 6 qt. popped corn
- 2 c. light brown sugar
- 1 tsp. salt
- 2 tsp. baking soda
- 2 sticks butter/margarine
- 1/2 c. light Karo syrup
- 1 tsp. vanilla
- nuts (optional)
- Pop
- corn,
- pick
- out seeds and set aside.
- Put butter, brown sugar,
- Karo
- syrup and salt into saucepan until butter melts. Bring
- to
- a
- boil,
- boil for 5 minutes, stirring constantly
- on medium heat.
- Remove from heat and add vanilla and baking
- soda; stir
- well.
- Mixture
- willtoam in pan, so use large enough pan. Pour mixture over popcorn and nuts in large roasting
- pan;tix well.
- Bake
- at 250u0b0 for 1 hour, stirring every
- 15
- minutes. Remove
- and
- dry.
- Cool
- on wax paper and store in a tin.
