Meat Loaf Roasted With Cabbage
- 1 lb. ground round steak
- 1/2 lb. ground pork steak
- 1 small boiled potato, mashed or 1/2 c. boiled rice
- 1 c. bread crumbs
- 1 egg
- 1 tsp. sugar
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. sage
- 1 c. milk
- 1 tsp. grated onion (optional)
- 1 medium size head of cabbage
- Remove outer leaves of cabbage.
- Cut in fourths and remove stalk.
- Break leaves apart and cover bottom of roaster.
- Sprinkle with salt; pour a little boiling water over.
- Put on cover; set over fire to steam until a little wilted.
- Mix and beat meat loaf mixture well.
- Form 2 oblong loaves; place on top of cabbage. Place in oven; roast for about 2 hours.
- Turn the loaves and stir cabbage occasionally.
