Vegetable Beef Soup
- 1 small onion, chopped
- 2 cups chopped carrots
- 2 cups chopped potatoes
- 14 1/2 oz. can green beans, drained
- 15 1/4 oz whole kernel corn, drained
- 15 1/4 oz. can Lima beans, drained
- 15 oz. can English peas
- 14 1/2 oz. can diced tomatoes, mashed
- 29 oz can tomato sauce
- 2 cups macaroni, precooked
- 2 lbs. ground chuck OR 2 - 3 cups chopped roast
- 1 - 2 pods hot peppers, optional
- In a large pot add onion, carrots, and potatoes. Cover with water and cook until almost done. While this is cooking, brown ground chuck until pink is gone. Drain and rinse with warm water. Add remaining ingredient to pot and season with salt and black pepper. Add water if needed for right consistency. Simmer for 30 - 45 minutes.
