Fruit Cookies
- 1/2 c. shortening
- 1 c. dark brown sugar
- 1 egg
- 1/4 c. buttermilk
- 1 3/4 c. flour
- 1/2 tsp. salt
- 1/2 tsp. soda
- 1/2 c. pecans
- 3/4 c. candied cherries
- 1/2 c. candied pineapple
- 3/4 c. white raisins
- 1/2 c. coconut
- 2 Tbsp. brandy flavoring
- Cream shortening and sugar, add egg and beat well.
- Sift dry ingredients together, add dry ingredients and milk to mixture. Add 1/2 cup extra flour to the candied fruits, nuts, raisins and coconut.
- Mix until fruit is well coated.
- Pour the batter over the fruits.
- Add brandy flavoring and mix well.
- Drop 1 teaspoon of mixture on a cookie sheet for each cookie.
- Bake at 300u0b0 for 12 minutes or until the cookies are a light golden brown.
- For decoration, put 1/2 candied cherry on top of each cookie before baking.
