Chicken Cacciatore(Servings: 4)
- 4 boneless chicken breasts (about 2 lb.)
- 1 large Bermuda onion
- 1 green bell pepper
- 1 red pepper
- 4 cloves fresh garlic, chopped fine
- 1/4 c. extra virgin olive oil
- 2 large cans crushed tomatoes
- 1/2 c. dry white wine
- 1 Tbsp. sweet basil
- 1 Tbsp. oregano
- salt
- pepper
- 1 lb. linguini
- Put the olive oil in a 5-quart Dutch oven.
- Saute the garlic until soft; add the onion and peppers, all sliced very thin.
- Add the sweet basil and oregano (more can be added if a more robust flavor is desired).
- Add the white wine and bring to a simmer. Add the chicken and simmer until the meat is white, stirring occasionally.
- Add the crushed tomatoes and simmer for 1 hour on very low heat.
