Mexican-Style Snapper With Lime
- 1/2 c. green onions
- 1/4 c. butter
- 1/2 fresh tomato, diced
- 1/4 c. chopped green chilies
- 2 Tbsp. chopped, fresh parsley
- 1/8 tsp. salt
- 1/8 tsp. garlic salt or 1 clove garlic, peeled and minced
- 1/4 tsp. grated lime peel
- 1/8 tsp. ground pepper
- 1 1/2 lb. fresh snapper fillet
- 12 lime wedges
- In a large skillet, saute green onions in butter until tender. Also, saute minced garlic if using fresh.
- Add tomatoes, chilies, parsley, salt, garlic salt, lime peel and black pepper; mix well. Bring mixture to a boil, reduce heat and simmer 5 minutes.
- Add snapper to skillet; spoon sauce over fillets.
- Cover and simmer 10 minutes or until fish flakes easily when tested with a fork. Serve garnished with lime wedges.
