Lobster Dien Bien
- 2 lb. fresh lobster or shrimp
- 6 oz. butter
- 2/3 c. chopped scallions
- 1 green pepper, diced
- 1 1/4 c. fresh mushrooms
- 1/2 c. Uncle Ben's converted rice
- 3 ripe tomatoes, chopped fine
- 2/3 c. chicken consomme
- 1 tsp. powdered tarragon
- 1 tsp. pepper
- Cut lobster in small pieces.
- Season with 1/2 teaspoon pepper and 1/3 teaspoon salt.
- Brown in 4 ounces of butter in pan. Partly brown lobster in butter.
- Chop scallions, green pepper and mushrooms and add to lobster.
- Simmer 5 minutes.
- Add rice, stirring continuously until rice is loose.
- Add tomatoes and consomme.
- Stir and cover.
- Cook about 25 minutes.
- Remove from heat.
- Brown remaining 2 ounces butter; add tarragon and pepper. Pour over lobster and mix well.
- Serves 3.
