Lobster Dien Bien

  1. Cut lobster in small pieces.
  2. Season with 1/2 teaspoon pepper and 1/3 teaspoon salt.
  3. Brown in 4 ounces of butter in pan. Partly brown lobster in butter.
  4. Chop scallions, green pepper and mushrooms and add to lobster.
  5. Simmer 5 minutes.
  6. Add rice, stirring continuously until rice is loose.
  7. Add tomatoes and consomme.
  8. Stir and cover.
  9. Cook about 25 minutes.
  10. Remove from heat.
  11. Brown remaining 2 ounces butter; add tarragon and pepper. Pour over lobster and mix well.
  12. Serves 3.
