Taco Seasoned Meat And Potatoes
- 1 (28 ounce) package o'brien frozen hash browns with onions and peppers, thawed, divided
- 1 1/2 lbs ground beef or 1 1/2 lbs ground chicken
- 1 1/2 cups salsa
- 2/3 cup water
- 1 (1 1/4 ounce) package taco seasoning mix
- 2/3 cup water
- 2 1/2 cups shredded colby-monterey jack cheese
- cooking spray
- In a medium skillet over medium heat, brown ground beef.
- Drain and return to skillet.
- Add taco seasoning and water.
- Stir until water is absorbed, about 5 minutes; add salsa, mixing well.
- With cooking spray, coat a 8 x 11-inch dish.
- Spread half of potatoes evenly over bottom of dish.
- Then spread half of ground beef mixture over potatoes.
- Sprinkle with half of the cheese.
- Repeat layers ending with cheese.
- Bake at 350u0b0F for about 25 to 30, or until cheese is a nice golden brown.
