Spicy Mango Glazed Chicken

  1. Cook aromatics in oil over medium heat until softened.
  2. Add vinegar, reduce by half.
  3. Stir in soy sauce and chutney, simmer gently for 15 minutes.
  4. Puree if desired. Cool.
  5. Place washed and dried chicken in resealable bags, divide cooled sauce between bags.
  6. Press out excess air and refrigerate for at least 8 hours.
  7. Preheat oven to 425u0b0F.
  8. Line a baking or roasting pan (with sides) large enough to hold the chicken with foil. Oil lightly.
  9. Place chicken in a single layer in pan. Pour marinade over chicken.
  10. Roast chicken, turning once, until deep brown and cooked through, about 40 minutes.
  11. (Cook time will depend on what kind of chicken you are using).
  12. Serve immediately.
