Louie Jane'S Gooseberry Pie
- 2 (15 ounce) cans gooseberries
- 1 1/2 cups granulated sugar
- 2 tablespoons flour
- 1 pinch baking soda
- 1/8 teaspoon salt
- 5 tablespoons heavy whipping cream or 5 tablespoons evaporated milk
- butter or margarine
- 1 pastry for double-crust pie
- Caramel Icing
- 1/4 cup butter or 1/4 cup margarine, melted
- 1/2 cup brown sugar
- 1/4 cup milk
- 2 cups powdered sugar
- 1. Mix the first 6 ingredients and pour into pie shell.
- 2. Dot with butter or margarine; add top pie pastry.
- 3. Bake at 300u0b0F until crust is golden brown, about an hour as ovens vary.
- 4. Make Caramel Icing by melting 1/4 cup butter or margarine in a saucepan.
- 5. Add 1/2 cup brown sugar; bring to boil and stir for 1 minute.
- 6. Cool slightly.
- 7. Add 1/4 cup milk and beat until smooth.
- 8. Add 2 cups powdered sugar and beat until smooth.
- 9. Pour over top of pie and let cool.
