Seafood Lasagne(Serves 4)
- 4 Tbsp. low calorie margarine, not stick
- 1/2 c. chopped onion
- 1 clove minced garlic
- 4 Tbsp. flour
- 2 c. skim milk
- 4 oz. grated Swiss cheese
- 1 (10 oz.) pkg. chopped spinach, drained and thawed
- 1 oz. grated Parmesan
- 6 1/2 oz. tuna, crab or shrimp
- 4 lasagna noodles
- 1/8 tsp. nutmeg
- Cook lasagna noodles.
- Heat margarine in skillet, saute onion and garlic.
- Stir in flour and milk.
- Heat until thick, stirring constantly.
- Add cheese and remove from heat.
- Combine 1/2 the cheese sauce with the spinach and Parmesan.
- In an 8-inch square pan, sprayed with "Pam," layer noodles, seafood and sauce.
- Use the sauce without spinach for the top layer.
- Sprinkle with nutmeg.
- Cover pan with foil and bake at 350u0b0 for 25 to 30 minutes. Approximately 400 calories per serving.
