Apple Salad With Creamy Maple Dressing
- DRESSING
- 1/2 cup canola oil
- 1/4 cup maple syrup (4 TB)
- 1/4 cup mayonnaise (4 TB)
- 3 tablespoons white wine vinegar
- 2 teaspoons sugar (I'd probably halve this if using really sweet syrup)
- salt and pepper, to taste
- SALAD
- 5 ounces mixed baby greens
- 1 gala apples, cored and chopped
- 1 Red Delicious apple, cored and chopped
- 1/2 cup dried cranberries
- 1/2 cup chopped walnuts
- Whisk together the syrup, mayo, vinegar, and sugar in a medium bowl.
- Whisk in the oil gradually until the mixture thickens slighlty, season with salt and pepper to your liking.
- Toss the greens, apples, cranberries, and half the walnuts together in a large bowl, toss with enough dressing to coat.
- Sprinkle with remaining walnuts, and serve.
