Mediterranean Roasted Potatoes For Clay Cooker

  1. Soak a clay cooker in water for 10 to 15 minutes.
  2. Place potatoes and onions in cooker, toss with oil.
  3. Add olives, pine nuts, garlic and raisins.
  4. Season with salt and pepper.
  5. Mix in vermouth.
  6. Place clay cooker in cold over and set oven to 240u0b0C.
  7. Roast 1 hour or until tender.
  8. Remove cooker from oven and place on a towel (Do not place hot cooker on a cold surface), let cool 10 minutes.
  9. Remove lid and stir in sliced basil.
  10. Garnish with basil leaves and serve.
