Swedish Chicken
- 1/2 lb. margarine (use sticks)
- 4 c. Bisquick
- 3 c. Cheddar cheese, diced in 1/2-inch cubes
- 1 tsp. salt (approximately)
- 5 lb. chicken breasts or thighs
- pepper to taste
- Remove skin and excess fat from chicken.
- Melt margarine. Grease sides and bottom of a 9 x 13-inch pan generously.
- Put cheese, salt, pepper and Bisquick in a bowl and toss thoroughly to coat the cheese.
- Dip chicken in melted margarine and roll it in the cheese and Bisquick mixture.
- Place in the pan with several pieces of cheese tucked around each piece of chicken.
- Sprinkle remaining Bisquick and cheese over top of chicken.
- Pour remaining margarine on top.
- Cover with foil.
- Bake at 350u0b0 for 45 minutes. Remove foil and bake until browned and crisp on top, approximately 35 to 45 minutes more.
