Cajun Gumbo Over Rice
- 4 cans red kidney beans
- 1 onion, minced
- 2 c. sliced okra
- 1 lb. crab meat
- 2 cans Ro-Tel tomatoes
- 2 Tbsp. flour
- 3 Tbsp. butter
- 2 cans chili hot beans
- 1 bell pepper, minced
- 1 lb. crawfish or shrimp
- 1 kielbasa sausage
- Tony Chachere seasoning
- 3 Tbsp. bacon fat
- Make a roux by adding heated bacon fat and adding flour. Brown slowly until the color of chocolate.
- Set aside.
- Saute onion and bell peppers in butter. Cut up sausage and crab meat. Combine all ingredients in a big pot.
- Let heat, then stir in roux.
- Cover and cook slowly for about 4 hours.
- Add seasonings to taste.
- Serve over rice.
- As they say in the bayou, "Eat all you want and pass a good time."
