Chicken Under Foil
- 1 chicken breast
- 1 medium potato, cut into 1/8-inch slices
- 1 medium carrot, thinly sliced
- 1 medium yellow squash, thinly sliced
- 1 stalk celery, chopped into 1/4-inch pieces
- 1/4 bell pepper, sliced
- 1 small onion, sliced
- 4 fresh mushrooms (whole)
- 5 or 6 fresh pea pods
- 1 tsp. butter
- salt and pepper to taste
- On large sheet of aluminum foil, place all ingredients in center.
- Wrap up ingredients and try to form good seal.
- Repeat this process two more times, making sure to form good seals. Place chicken under foil directly in coals of fire.
- Allow to cook 15 to 20 minutes on each side.
- Take off fire and open carefully. Meal should be eaten directly from foil.
- This recipe is for one person and provides a complete meal.
