Cream Of Broccoli Soup
- 4 c. chicken broth
- 1 can (10 3/4 oz.) cream of celery soup
- fresh broccoli, cut & steamed until tender
- 1/2 c. butter or margarine
- 1 medium onion, chopped
- 1/4 c. flour
- 2 c. milk
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 jar of old english cheese
- 1 small jar of cheese whiz
- Mix broth and soup in large pan and bring to a boil. Add steamed broccoli and reduce heat. Simmer, covered for about 5 minutes.
- Heat butter in pan and add chopped onion, saute until tender.
- Add flour to butter & onions.
- Cook for 1-2 minutes. Gradually stir in milk with onion and flour mixture.
- Cook until thickened, about 5-10 minutes. Add salt and pepper, mix well. Stir milk mixture into broccoli mixture.
- Add the 2 cheeses and simmer for about 15 minutes. Serves 4-6 people.
