Million Dollar Chili

  1. In a large kettle, melt beef suet.
  2. Add garlic and onions. Cook until golden.
  3. Add green pepper and meat, breaking up until crumbly.
  4. Spoon off liquid.
  5. Mix in salt, pepper and tomatoes. Add beans, chili powder, cumin, oregano, paprika and wine, mixing after each addition.
  6. Simmer 1 1/2 hours.
  7. Cool; refrigerate 2 days.
  8. When ready to use, skim fat off top and reheat slowly.
