Quick Beef And Broccoli

  1. Slice steak diagonally across grain into thin strips.
  2. Place in a shallow dish. Combine soy sauce, sherry, cornstarch and sugar in a small bowl.
  3. Pour over steak and set aside. Cut flowerets from broccoli. Cut stalks into thin slices.
  4. Pour 2 tablespoons oil into wok or large skillet, coating bottom and sides.
  5. Heat to medium-high (325u0b0) for 1 minute. Add broccoli and onion. Stir-fry for 2 minutes. Remove from wok.
  6. Pour remaining 1 tablespoon oil into wok, coating sides.
  7. Add steak. Stir-fry 1 to 2 minutes. Stir in broccoli mixture. Serve over rice.
  8. Yields 4 servings.
