Quick Beef And Broccoli
- 1 lb. flank steak
- 1/4 c. soy sauce
- 1 Tbsp. dry sherry
- 1 Tbsp. cornstarch
- 1 tsp. sugar
- 2 stalks broccoli
- 3 Tbsp. vegetable oil, divided
- 1 small onion, cut into strips
- 1/2 c. sliced fresh mushrooms
- hot cooked rice
- Slice steak diagonally across grain into thin strips.
- Place in a shallow dish. Combine soy sauce, sherry, cornstarch and sugar in a small bowl.
- Pour over steak and set aside. Cut flowerets from broccoli. Cut stalks into thin slices.
- Pour 2 tablespoons oil into wok or large skillet, coating bottom and sides.
- Heat to medium-high (325u0b0) for 1 minute. Add broccoli and onion. Stir-fry for 2 minutes. Remove from wok.
- Pour remaining 1 tablespoon oil into wok, coating sides.
- Add steak. Stir-fry 1 to 2 minutes. Stir in broccoli mixture. Serve over rice.
- Yields 4 servings.
