Peach Jam

  1. Rinse clean plastic containers and lids with boiling water. Peel and pit peaches; chop very fine.
  2. Measure 2 1/4 cups into large bowl.
  3. Add lemon juice.
  4. Stir sugar into fruit.
  5. Let stand 10 minutes; stir occasionally.
  6. Mix water and pectin in small saucepan.
  7. Bring mixture to boil over high heat, stirring constantly.
  8. Continue boiling and stirring 1 minute.
  9. Stir pectin mixture into fruit mixture.
  10. Stir until sugar dissolves, about 3 minutes.
  11. Fill all containers quickly to within 1/2-inch of tops. Wipe off top edges of containers; cover with lids.
  12. Let stand at room temperature for 24 hours.
  13. Store in refrigerator up to 3 weeks or freeze extra container up to 1 year.
