Smoked Turkey And Rice Casserole
- 12 slices bacon
- 1 Tbsp. salt
- 1 1/2 qt. milk
- 1 qt. diced turkey
- 6 c. cooked rice
- 1/2 c. flour
- 1/2 tsp. pepper
- 2 pkg. smoked flavored cheese (each 6 oz.), cubed
- 1/4 c. pimento
- paprika
- Cook bacon until crispy, reserving drippings.
- Blend flour, salt and pepper into 1/2 cup bacon drippings.
- Add milk, slowly, stirring until thick and smooth.
- Add 2/3 of cubed cheese; stir until somewhat melted.
- Fold in turkey, pimento, rice and crumbled bacon.
- Pour into two buttered 1 1/2-quart casseroles or three 1-quart casseroles.
- Top with remaining cheese and sprinkle with paprika.
- Bake at 350u0b0 for 20 to 30 minutes until bubbly.
- (Wrap and freeze one.)
- This is great for after the holidays using your leftover turkey.
