Mouth Watering Chili
- 1 lb. dried red kidney beans
- 1 lb. ground beef
- 1 (6 oz.) can tomato paste
- 1 (15 oz.) can tomato sauce
- 1 (15 oz.) can tomatoes
- 1 large onion, chopped
- 1/2 tsp. garlic powder
- 1 tsp. red pepper
- 2 tsp. chili powder
- 2 Tbsp. sugar
- 1 Tbsp. salt
- 1/2 tsp. black pepper
- 3 Tbsp. cornstarch (approximately, to thicken)
- Soak beans overnight; rinse.
- In a large pot, add enough water to cover beans by at least 2-inches. Bring to a boil and reduce heat to medium.
- Add browned ground beef, drained, and next 10 ingredients.
- Cover and simmer slowly for 3 hours, stirring occasionally. Add more hot water as needed, 1 cup at a time. Slowly add 1 cup of cool water to cornstarch. Add to simmering beans, 1/2 cup at a time, until thickened to preference.
- Freeze leftover chili for a quick meal another night.
