Chocolate Macadamia Nut Pie
- 6 oz. chocolate wafers, crushed (1 2/3 c. approximately)
- 4 Tbsp. butter, melted
- 6 oz. semi-sweet chocolate
- 4 oz. cream cheese, softened
- 3/4 c. sugar
- 1 (3 1/2 oz.) jar Macadamia nuts, coarsely chopped
- 2 c. well chilled whipping cream
- Crush or pulverize wafers in food processor.
- Combine crumbs with melted butter and press into bottom of 9-inch spring-form pan or 9-inch pie pan.
- Melt chocolate in double boiler over hot, not boiling, water or in microwave.
- Allow to cool slightly.
- Beat together melted chocolate, cream cheese, sugar and vanilla in large bowl.
- Fold nuts into creamed mixture.
- Whip cream until peaks form.
- Beat about a fourth of the whipped cream into the cheese mixture, then gently fold in remaining cream.
- Pour filling into chocolate crumb crust and freeze at least 4 hours or overnight. Remove 10 minutes before serving.
