Island Style Banana Bread
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 teaspoons cinnamon
- 1/2 cup butter, softened (not margarine)
- 3/4 cup firmly packed brown sugar
- 2 slightly beaten eggs
- 1 teaspoon vanilla extract
- 3 ripe mashed bananas
- 1/2 cup chopped pecans
- 1 (8 ounce) package cream cheese
- 1 egg
- 1/2 cup flaked coconut
- Preheat oven to 350 degrees.
- Grease the bottom and half way up the sides of 2 loaf pans; set aside.
- Combine the next 5 ingredients; set aside.
- In a large mixing bowl beat butter with mixer on high speed for 30 seconds.
- Add 1/2 cup of the brown sugar, the 2 eggs and the vanilla; beat until well combined.
- Add dry mixture and mashed bananas alternately to beaten mixture, beating on low speed after each addition, until well combined.
- Stir in pecans.
- In a medium bowl beat together the cream cheese, the 1 egg and remaining 1/4 cup brown sugar on medium speed until almot smooth.
- Stir in coconut.
- Pour 1/4 of the banana mixture into each loaf pan.
- Spoon 1/4th of the cream cheese mixture over each banana mixture.
- Using a spatula, cut through the batter to marble.
- Repeat the 2 layers as above but don't marble this time.
- Bake in preheated oven for about 50 mins or until they test done.
- Cool in pans on wire rack for 10 minutes.
- Remove from pans and cool completely.
