Yum(Spicy Seafood Salad)
- 6 large oysters
- 5 large shrimp
- 4 oz. squid
- 1 stalk lemon grass
- 2 oz. fresh mint leaves
- 2 green onions
- 1 small onion
- 1 1/3 Tbsp. fish sauce
- 1 1/4 tsp. sugar
- 1 tsp. m.s.g. (optional)
- 4 1/2 tsp. lemon or lime juice
- 1 tsp. sliced hot pepper or ground hot pepper
- 3 c. water
- 2 small tomatoes
- Clean squid and slice into strips 1 inch wide.
- If using fresh oysters, remove from shell.
- Clean and devein shrimp.
- Slice lemon grass and green onion into very thin pieces.
- Cut tomatoes into 6 pieces each.
- Slice onion.
- Place water in a saucepan and boil.
- Add shrimp, oyster and squid.
- Boil for 1 minute.
- Remove from stove and drain all water leaving seafood in pan.
- Place all other ingredients in pan.
- Stir until all ingredients are well mixed.
- Place on serving plate covered with lettuce leaves.
- Serve 2.
