Ever-So-Easy Fruitcake
- 2 1/2 c. unsifted flour
- 1 tsp. baking soda
- 2 eggs, slightly beaten
- 1 (28 oz.) jar None Such ready to use mincemeat
- 1 c. pecan or walnut pieces
- 1 (14 oz.) can Eagle Brand sweetened milk (not evaporated milk)
- 2 c. (1 lb.) mixed candied fruit (Queen Anne fruit mix)
- Preheat
- oven
- to 300u0b0.
- Grease a 9-inch tube pan, line with wax paper and grease again (or use generously greased and floured 10-inch
- fluted
- tube
- pan).
- Sift together flour and baking soda, set aside.
- In large bowl mix remaining ingredients;
- blend in
- dry
- ingredients.
- Pour
- into
- prepared pan. Bake 1
- hour
- and 50 minutes or until toothpick inserted near center comes
- out clean.
- Cool
- 15 minutes.
- Turn out of pan, remove wax paper. Garnish, if desired.
