Tropical Mandarin Bread
- 1/2 c. cooking oil
- 3/4 c. sugar
- 1/2 c. mashed ripe bananas (1 to 1 1/2 medium)
- 1/2 tsp. almond extract
- 1 (11 oz.) can mandarin oranges, drained
- 1 1/2 tsp. grated orange peel
- 1 3/4 c. unsifted all-purpose flour
- 2 eggs
- 1/2 tsp. soda
- 1/2 tsp. powder
- 3/4 tsp. salt
- 1 to 2 Tbsp. graham cracker crumbs
- Blend together oil and sugar in large mixing bowl.
- Add eggs, one at a time, beating well after each.
- Stir in bananas and almond extract.
- Cut oranges into pieces and add to banana mixture.
- Stir in remaining ingredients except graham cracker crumbs.
- Mix well. Grease bottom and sides of an 8 x 4-inch or 9 x 5-inch (1 1/2-quart) loaf pan.
- Sprinkle with graham cracker crumbs.
- Shake out excess.
- Pour batter into pan, spreading evenly.
- Bake 55 minutes at 325u0b0.
- Yields 1 loaf.
