Cranberry Sauce Cake
- 1/2 c. plus 1 Tbsp. margarine
- 1 c. sugar
- 1 beaten egg
- 1/4 tsp. almond extract
- 1 c. raisins, soaked in hot water to plump, then drain)
- 2 c. flour
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1 1/4 tsp. baking powder
- 1 tsp. cinnamon
- 1/4 tsp. cloves
- 1/4 tsp. allspice
- 1 can whole cranberry sauce
- Cream margarine and sugar.
- Add egg and almond extract.
- Cream again.
- Sift together the flour, salt, baking soda, baking powder, cinnamon, cloves and allspice.
- Set aside.
- Dry raisins on paper toweling.
- Mix raisins with a tablespoon or two of the dry ingredients.
- Add raisins to creamed mixture.
- Add dry ingredients and blend well.
- Add cranberry sauce, mixing well.
- Pour into a greased 9-inch angel food pan.
- Bake in preheated 350u0b0 oven 1 hour or until it tests done.
