Chicken Gumbo
- 3 Tbsp. butter or margarine
- 1/2 c. scallions
- 3 c. diced, cooked chicken, cut up
- 16 oz. can stewed tomatoes
- 2 1/2 c. chicken broth
- 10 oz. pkg. frozen okra
- 1/4 c. chopped parsley
- 2 Tbsp. lemon juice
- 1/2 c. diced celery
- 1/4 c. diced green pepper
- 1 garlic clove, minced
- 1/2 tsp. thyme
- 3 bay leaves
- 1 to 2 tsp. file powder
- 3 drops hot pepper sauce
- 1/4 c. uncooked regular rice
- Melt butter in large saucepan over medium heat. Cook onion, celery and green pepper until tender.
- Add remaining ingredients, except rice.
- Bring to a boil.
- Stir in rice.
- Reduce heat. Simmer uncovered for 20 minutes or until rice is tender.
- Makes approximately 6 (1 cup) servings.
