Spinach Gourmet

  1. Melt butter in saucepan; saut onion until tender. Add flour, stirring until smooth.
  2. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring until thick and bubbly.
  3. Drain spinach in a colander; place on paper towels. Press until barely moist.
  4. Stir spinach, eggs, salt and pepper into sauce.
  5. Spread in a lightly greased 8-inch square baking dish.
  6. Combine crushed flakes and cheese; mix well. Sprinkle over spinach mixture. Sprinkle lightly with paprika.
  7. Bake at 375u0b0 for 20 minutes.
  8. Yield: 6 servings.
