Spinach Gourmet
- 3 Tbsp. butter
- 2 Tbsp. onion
- 3 Tbsp. flour
- 2 c. milk
- 2 (14 oz.) cans spinach
- 3 boiled eggs
- 1/2 c. corn flakes, crushed
- 1/2 c. shredded cheese
- 1 tsp. salt
- 1/2 tsp. pepper
- paprika
- Melt butter in saucepan; saut onion until tender. Add flour, stirring until smooth.
- Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring until thick and bubbly.
- Drain spinach in a colander; place on paper towels. Press until barely moist.
- Stir spinach, eggs, salt and pepper into sauce.
- Spread in a lightly greased 8-inch square baking dish.
- Combine crushed flakes and cheese; mix well. Sprinkle over spinach mixture. Sprinkle lightly with paprika.
- Bake at 375u0b0 for 20 minutes.
- Yield: 6 servings.
