Boursin Quiche
- pastry for 9-inch pie
- 1 c. grated Swiss cheese
- 1/4 c. chopped green onions
- 1/4 c. chopped ripe olives
- 8 oz. pkg. fresh mushrooms
- 1 small tomato, peeled and chopped
- 1 Tbsp. flour
- 3 eggs
- 1/2 c. half and half
- 1 pkg. Boursin cheese, at room temperature
- Preheat oven to 375u0b0.
- Line 9-inch pie tin with pastry.
- In a small bowl, mix Swiss, green onions, olives, mushrooms and tomato. Toss to combine.
- Add flour and toss to coat.
- Transfer cheese mixture to pastry.
- In a small bowl, combine eggs and half and half.
- Beat with a fork to mix.
- Add Boursin, which has been crumbled, and beat ingredients together with a whisk until well blended.
- Bake quiche in preheated oven for 35 minutes or until golden and knife inserted comes out clean.
- Let cool slightly before cutting.
- Can also bake in 3-inch tart shells.
