Grammy'S Strawberry Glazed Pie
- 2 pt. fresh strawberries, washed and stemmed
- 1/2 c. water
- 1 c. sugar
- 3 Tbsp. cornstarch
- 1 Tbsp. butter
- 1 drop red food coloring
- 1 baked pie shell
- 1/2 pt. heavy cream, whipped with 1 Tbsp. sugar
- Put aside 8 small whole berries for garnish.
- Take a handful of berries and squeeze enough into a small saucepan to make 1/2 cup. Leave the rest of berries whole or halved.
- Combine sugar, cornstarch, and water with crushed berries.
- Bring to boil over medium heat and cook while stirring over low heat for 3 minutes, or until clear and thickened.
- Add a drop of red food coloring and butter.
- Stir and let cool.
- Place berries into cooked pie shell and cover with cooled sauce.
- Top with real whipped cream and garnish with a few small whole berries.
- Refrigerate until ready to serve.
