Sausage Stuffed Shells
- 1 lb. Italian sweet sausage
- 1/2 c. chopped onion
- 4 slices bread, crumbled
- 1 egg
- 1/4 c. parsley
- 20 jumbo shells, boiled and drained
- 2 (15 1/2 oz.) jars spaghetti sauce
- 1/4 c. Parmesan cheese, grated and divided
- Heat oven to 350u0b0.
- Prick sausage with fork and cook in a small amount of water in a covered skillet for 5 minutes.
- Drain.
- Chop sausage and fry along with onion until brown and crumbly, stirring often.
- Spoon off fat.
- Add egg, bread and parsley; mix thoroughly. Fill hot shells with sausage mixture.
- Pour 1/2 the sauce into a 13 x 9 x 2-inch baking pan.
- Arrange shells in pan.
- Pour remaining sauce over shells.
- Cover with foil and bake for 30 minutes. Remove foil.
- Sprinkle grated cheese over top and bake, uncovered, 10 more minutes.
