Million Dollar Pickles

  1. Wash and cube peppers, onions, cucumbers and carrots.
  2. Place all veggies in a large bowl. Cover with water and 1 cup salt.
  3. Let stand at least 3 hours or overnight.
  4. Put vinegar, sugar and spices in a large enamel pot; bring to a boil.
  5. Add the veggies; again bring to a boil.
  6. Ladle the veggies into hot jars.
  7. Add the hot liquid to cover veggies.
  8. Put tops on immediately and seal by immersing in a canning kettle or large pot of boiling water. Leave quart jars in for 10- minutes, pint jars for 5 minutes.
