Pumpkin Bran Muffins
- 1 c. wheat bran cereal (not flaked)
- 1/2 c. undiluted Carnation evaporated milk
- 1 1/4 c. all-purpose flour
- 2/3 c. sugar
- 1 Tbsp. baking powder
- 1 tsp. ground cinnamon
- 1/2 tsp. salt
- 1/2 tsp. ground nutmeg
- 1/4 tsp. ground cloves
- 1 c. Libby's solid pack pumpkin
- 1/2 c. vegetable oil
- 1 egg, slightly beaten
- 1/2 c. raisins
- 3 Tbsp. cinnamon/sugar, mixed
- In medium bowl, combine cereal and milk. Let stand 10 minutes or until milk is absorbed. In large bowl, combine flour, sugar, baking powder, salt, cinnamon, nutmeg and cloves; set aside. Add pumpkin, oil, eggs and raisins to cereal. Add liquid ingredients to dry ingredients; stir just until moistened. Spoon batter into greased or paper-lined 2 1/2-inch muffin cups; fill to top. Sprinkle each muffin with 1 teaspoon cinnamon sugar. Bake at 400u0b0 for 25 to 30 minutes or until wooden pick inserted in center comes out clean. Cool in pan and remove to eat! Makes 9 muffins.
