Grilled Reuben Sandwich
- 1/2 c. mayonnaise
- 1 Tbsp. catsup
- 1 Tbsp. horseradish
- 1 Tbsp. fresh parsley, chopped
- 1/4 tsp. pepper
- 8 slices rye bread
- 3/4 lb. sliced corned beef
- 1 c. sauerkraut
- 2 Tbsp. butter
- 4 slices (4 oz.) Gruyere or Alpine Swiss cheese
- Combine the mayonnaise, catsup, horseradish, parsley and pepper.
- Spread this sauce on bread.
- Layer the corned beef and sauerkraut on 4 slices of the bread and top with the cheese. Cover with the remaining bread and spread with 1 tablespoon of the butter.
- Melt the remaining 1 tablespoon of butter in a large nonstick frying pan over medium heat.
- Add sandwiches, unbuttered side down, and fry until golden, about 5 minutes on each side. Turn and brown the other side.
- Makes 4 servings.
