Weight Watchers Citrus N Ginger Roasted Broccoli
- 1 large head broccoli, cut into florets w some stem
- 1 tablespoon extra virgin olive oil
- 1 tablespoon low sodium soy sauce
- 2 teaspoons orange juice
- 2 teaspoons orange zest
- 1 1/2 teaspoons minced gingerroot
- 1 1/2 teaspoons minced garlic
- Preheat oven to 450.
- Line a large baking sheet with parchment paper.
- Toss broccoli with oil, spread on prepared pan in an even layer.
- Roast, stirring once half way throught, until lightly browned, about 20 to 25 minutes.
- While broccoli roasts, in small bowl, whisk together soy sauce, orange juice, zest, ginger and garlic.
- Immediately drizzle roasted broccoli with orange mixture and serve.
- Yields about 1 cup per serving.
