King Ranch Casserole
- 1 large fryer
- 1 medium chopped onion
- 3/4 c. chopped celery
- 1 Tbsp. salt
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 12 corn tortillas
- 1 small chopped green pepper
- 1/2 pkg. chili mix
- 1 c. shredded cheese
- Boil chicken, onion,
- celery
- and
- salt
- in water until chicken is tender.temovethicken
- from broth and cool.
- Cut meat into small chunks.
- Add soupsto 1 1/2 cups of broth and stir.
- Arrange tortillas in piecestn
- bottom of buttered 8 x 12-inch casserole.tover
- with chicken chunks.
- Sprinkle with green peppers and Ro-Tel
- chilies.tour
- soup
- mix
- over all. Sprinkle with chili mix.
- Cover
- and bake in preheated oven at 350u0b0 for 30 to 40
- minutes.
- Remove
- from
- oven
- and
- sprinkle cheese on top.
- Return
- totven
- and
- cook,
- uncovered, until cheese is bubbly.
