One Step Spinach Lasagna
- 2 c. cottage cheese
- 2 c. shredded Mozzarella
- 1 egg
- 1 (10 oz.) pkg. frozen spinach
- 1 tsp. salt
- 1/8 tsp. pepper
- 8 oz. pkg. lasagna (uncooked)
- 3/4 tsp. oregano
- 2 c. spaghetti sauce
- 1 c. water
- Parmesan cheese (for topping)
- Thaw and drain spinach.
- In large bowl, mix cottage cheese, 1 cup Mozzarella cheese, egg, spinach, salt, pepper and oregano.
- In a 13 x 9 x 2-inch pan, lay 1/2 cup sauce, 1/3 noodles and 1/2 cheese mixture.
- Repeat layers.
- Top with remaining noodles, then sauce and Mozzarella cheese and Parmesan cheese.
- Pour 1 cup water around the edges.
- Cover tightly with foil.
- Bake at 350u0b0 for 1 hour and 15 minutes or until bubbly.
- Let stand 15 minutes.
- (Also you can take off foil for the last 15 minutes to brown.)
- Can be made ahead and frozen.
