Shrimp Party Ring
- 2 Tbsp. gelatin
- 1 c. consomme
- 8 oz. cream cheese
- 3/4 c. mayonnaise
- 2 cans Orleans shrimp (cocktail, small, medium)
- 1 c. chopped celery
- 2 pimentos, chopped
- 1 bottle capers, drained
- 2 Tbsp. grated onions
- 1/2 c. chili sauce
- 2 Tbsp. lemon juice
- 2 tsp. Worcestershire sauce
- 1/4 c. chopped parsley
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 drops Tabasco
- Soften gelatin in 1/4 cup consomme.
- Heat remaining consomme; add softened gelatin to dissolve.
- Cool.
- In a bowl, beat cream cheese and mayonnaise with a wooden spoon until well blended.
- Add cooled consomme and all other ingredients.
- Place in a lightly greased 2-quart ring mold or fish mold.
- Chill.
- Serve on lettuce with French dressing.
- Can be prepared the day before serving.
